What's Cooking Wednesday: Chicken Bake
If you're looking for something to cook during the week thats going to take very little effort and still be delicious, you've come across the perfect recipe. Seriously, what could be easier than a one-pan chicken bake? What's even better?... Just three main ingredients.
When I originally came across this recipe, it called for Italian seasoning - which was fine and if that's what you have in your pantry, then use it! I just got experimental after the first run and opted for Ranch seasoning instead (because I had a huge container of it - see picture below!). Either is equally delicious. I promise!
I love this recipe because most days of the week I typically have chicken (even if it's in the freezer), potatoes, and cans of green beans. (A huge thanks to my mom who has always instilled in me to always be stocked up on food!)
Worse case scenario, you have to run into the grocery store and pick up three items. No biggie.
And if you're only cooking for yourself or you and your spouse, you're going to have a good amount of leftovers and this dreamy meal is just as good on day two... and day three.
Let's get cooking.
What You Need:
3-4 large chicken breasts - cut in half
Potatoes
Two cans green beans
Onion
Ranch seasoning
Salt + pepper
Instructions:
Preheat oven to 350
Dice potatoes and layer on one side of pan
Layer chicken breast halves beside potatoes
Drain green beans and layer beside chicken
Season chicken with salt, pepper, and ranch powder
Season potatoes with salt and pepper, and top with eight thin slats of butter
Season green beans with pepper (and red pepper flakes for a spicy option - which I typically do)
Lastly, layer thin slices of onion over chicken
Cover pan tightly with aluminum foil and bake for 1 hour and 15 minutes
